FLOUR-BREAD '09 OVERVIEW The 5th International Congress „Flour-Bread ‘09“ and the 7th Croatian Congress of Cereal Technologists „Flour-Bread '09“ was held in Opatija from 21-23 October 2009 in the hotel Adriatic, Opatija. The Congress has been organized traditionally every second year since 1997 by the Faculty of Food Technology in Osijek, the Department of Cereal Processing Technology. Since 2001, the International Association for Cereal Science and Technology (ICC) has been the co-organizer of the Congress. The Congress is an important international forum for displaying the latest scientific and professional achievements in the area of cereal processing. The Congress was organized under the auspices of the Ministry of Science, Education and Sports of the Republic of Croatia, the Ministry of Agriculture, Forestry and Water Management, the University of Josip Juraj Strossmayer in Osijek, the Croatian Academy of Technical Sciences and Croatian Parliament–the Chamber of Economy. The Congress was also supported by the European Association for Chemical and Molecular Sciences, and the EU projects: FRESHBAKE, HEALTHGRAIN and MONIQUA, as well as by various sponsors and especially by the firm CHOPIN. During the Congress, the EU-FRESHBAKE Symposium was also held when all research results were presented by the project researchers. This event also gave a significant contribution to the Congress. The Congress topics were the following: cereal storage, analytical and rheological methods, cereals in healthy diet, milling technology, achievements in bread-baking technology, extruded products, pasta and pastry products, quality assurance and control, nutritive and sensory quality. Despite the economic recession worldwide, 250 experts from 25 countries took part in the Congress. There were 40 oral presentations and 96 posters at the Congress. 15 national and international firms presented their production programmes. This Congress opened the door to Croatia to participate in the European and worldwide projects in the field of cereal research. The European Community gives priority to those researches that contribute to an increased consumption of cereal-based products with the added nutritive value, with reduced allergen symptoms, with low toxic content as well as organically grown cereals. All these topics were dealt with at the Congress. The displayed research results will definitely help in faster acceptance of the latest scientific achievements in cereal production and processing, development of new products and quality enhancement, justifying thus the purpose of the Congress organization.
